Banana
Muffins

Ingredients

1 ½  cups of plain flour 
1 teaspoon baking powder 
1 teaspoon of bicarb soda 
1/2 teaspoon salt 
1 teaspoon ground cinnamon 
345g mashed banana (about 3 or 4 ripe bananas) 
85g unsalted butter melted 
135g light brown sugar 
1 large egg 
1 teaspoon vanilla extract 
2 tablespoons of milk 
12 muffin cases 

Step 1

Preheat oven to moderate, 180°C. Place muffin cases in 12 count muffin tin. 

Step 2

Sift flour, baking powder, bicarbonate of soda, salt and cinnamon into a large bowl. Set aside.

Step 3

In a large bowl, combine mashed banana, butter, brown sugar, egg, vanilla extract and milk and beat on a medium speed until well combined. Pour dry ingredients into wet ingredients and beat until combined 

Step 4

Spoon mixture into cases until 2/3 full.  

Step 5

Bake, 15-20 minutes, until cooked when tested with a skewer. Cool in pans for 5 minutes than transfer onto a wire rack to cool completely. 

Pairs well with black tea
